The Taste of the Boreal Forest

It has been said that modern man’s ability to taste has been greatly reduced by sugar, salt and spices. No longer can we taste and appreciate the flavours of nature. I think that is very true, so I do my best to keep connected to nature with all my senses. Sometimes I will make Chaga tea, which is not a tea at all, but a brew made from a very healthy fungus. It has been claimed that chaga is the most concentrated source of antioxydants in nature and while it might not be your “cup of tea”, as it does taste a bit bland, for centuries it has been used to fight some sorts of cancer.
